Ingredients

1 lb (450 g) carrots, peeled and cut into 1-inch pieces

2 tbsp olive oil

2 tbsp Honey in the Hollow Bee Farm honey

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder (optional)

1 tbsp fresh parsley, chopped (optional for garnish)
Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the carrots with olive oil, Honey in the Hollow Bee Farm honey, thyme, salt, pepper, and garlic powder (if using). Toss to coat the carrots evenly.

Spread the carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25–30 minutes, stirring halfway through, until the carrots are tender and lightly caramelized.

Once the carrots are roasted, remove from the oven and transfer them to a serving dish. Garnish with chopped fresh parsley if desired. Serve as a delicious side dish with your favorite protein or salad.
