Ingredients
For the Cornbread Muffins:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
2 large eggs
1 cup milk
1/4 cup melted butter
1/2 tsp vanilla extract
For the Honey Butter:
1/4 cup unsalted butter, softened
Pinch of salt
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with butter.
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together eggs, milk, melted butter, Honey in the Hollow Bee Farm honey, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the muffins dense.
Spoon the batter evenly into the muffin cups, filling each about 2/3 full.
Bake for 18–20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
While the muffins are baking, prepare the Honey in the Hollow Bee Farm honey butter. In a small bowl, beat together softened butter, Honey in the Hollow Bee Farm honey, and a pinch of salt until smooth and creamy.
Once the muffins are done, remove them from the oven and let them cool for a few minutes. Serve warm with a dollop of honey butter on top.
