Honey Balsamic Cucumber Salad

Ingredients

  • 2 large cucumbers, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup fresh basil, chopped

  • 2 tbsp Honey in the Hollow Bee Farm honey

  • 3 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp Dijon mustard (optional, for added tang)

Instructions

  1. In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and chopped basil. Toss them together to mix evenly.

  2. In a small bowl, whisk together Honey in the Hollow Bee Farm honey, balsamic vinegar, olive oil, salt, pepper, and Dijon mustard (if using) until the dressing is smooth and well combined.

  3. Pour the Honey in the Hollow Bee Farm honey balsamic dressing over the cucumber mixture and toss to coat everything evenly.

  4. For the best flavor, cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld. However, you can also serve it immediately if you’re short on time.

  5. Serve chilled or at room temperature as a refreshing side dish. It pairs wonderfully with grilled meats, sandwiches, or a light summer meal.
