Honey Butter Cornbread Muffins

Ingredients

For the Cornbread Muffins:

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1/4 cup sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 2 large eggs

  • 1 cup milk

  • 1/4 cup melted butter

  • 1/4 cup Honey in the Hollow Bee Farm honey

  • 1/2 tsp vanilla extract

For the Honey Butter:

  • 1/4 cup unsalted butter, softened

  • 2 tbsp Honey in the Hollow Bee Farm honey

  • Pinch of salt

Instructions

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with butter.

  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together eggs, milk, melted butter, Honey in the Hollow Bee Farm honey, and vanilla extract.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the muffins dense.

  • Spoon the batter evenly into the muffin cups, filling each about 2/3 full.

  • Bake for 18–20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

  • While the muffins are baking, prepare the Honey in the Hollow Bee Farm honey butter. In a small bowl, beat together softened butter, Honey in the Hollow Bee Farm honey, and a pinch of salt until smooth and creamy.

  • Once the muffins are done, remove them from the oven and let them cool for a few minutes. Serve warm with a dollop of honey butter on top.
