1 1/2 cups rolled oats

1/4 cup honey

1/4 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1/2 cup raisins or chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)
Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

In a medium bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt. Stir to combine and set aside.

In a large mixing bowl, beat the softened butter, honey, and brown sugar together using an electric mixer until smooth and creamy, about 2 minutes.

Beat in the egg and vanilla extract until fully incorporated.

Gradually add the dry oat mixture to the wet ingredients, mixing until just combined. Stir in the raisins, chocolate chips, or nuts (if using).

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 12–15 minutes, or until the edges are golden brown and the centers are set.
