INGREDIENTS
4 – plums, pit removed and sliced into wedges
1/3 cup + 3 T – honey
3/4 cup – all-purpose flour
1/2 tsp. – kosher salt
1/2 tsp. – cardamon
1/2 tsp. – cinnamon
1/2 cup – whole milk
1/4 cup – sour cream or whole milk yogurt
3 large – eggs
2 T – melted butter
2 tsp. – vanilla
additional honey for drizzling
DIRECTIONS
Preheat broiler to high.
Coat the ramekins with nonstick spray and place on a sheet pan. Divide the plum wedges between the ramekins and drizzle with 3 T of the honey. Broil for about 3 minutes and remove from the oven. Reduce the heat the 375º.
In a medium bowl, whisk together the milk, sour cream, eggs, melted butter, remaining honey and vanilla until well combined. Next add the flour, salt, cardamom and cinnamon and whisk until most of the lumps are gone.
Pour the batter over the broiled plums and return to the oven to bake for 8-10 minutes or until center is set and a toothpick inserted in the center comes out clean. Cool for about 10 minutes and drizzle with more honey. Serve warm by itself or with whipped cream!
TIP
You can use any stone fruit in this recipe, peaches would be excellent!”
