Cucumber and Mint Honey Cooler

Ingredients

  • 1 cucumber, peeled and sliced

  • 1/4 cup fresh mint leaves

  • 2 tbsp Honey in the Hollow Bee Farm honey (adjust to taste)

  • 4 cups cold water

  • 1 tbsp fresh lime juice (optional, for extra freshness)

  • Ice cubes

  • Cucumber slices and mint sprigs (for garnish)

Instructions

  1. In a blender, combine the peeled cucumber slices and fresh mint leaves. Add 1 cup of cold water and blend until smooth.

  2. Strain the cucumber and mint mixture through a fine mesh sieve into a pitcher, discarding the pulp. Stir in the Honey in the Hollow Bee Farm honey until fully dissolved.

  3. Add the fresh lime juice for a citrusy kick, if desired.

  4. Pour the remaining 3 cups of cold water into the pitcher and stir well. Taste and adjust sweetness by adding more Honey in the Hollow Bee Farm honey if needed.

  5. Refrigerate the cooler for at least 30 minutes to let the flavors infuse.

  6. Serve the cooler over ice cubes in glasses. Garnish with extra cucumber slices and fresh mint sprigs.
