Honey Garlic Chicken Stir Fry

Ingredients

For the Stir-Fry:

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 tbsp olive oil or sesame oil

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 medium zucchini, chopped

  • 1 cup broccoli florets

  • 2 medium carrots, julienned

  • 1 tbsp sesame seeds (optional, for garnish)

  • Cooked rice or noodles (for serving)

For the Honey Garlic Sauce:

  • 1/4 cup Honey in the Hollow Bee Farm honey

  • 3 tbsp low-sodium soy sauce

  • 2 cloves garlic, minced

  • 1 tsp freshly grated ginger

  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  • In a small bowl, whisk together honey, soy sauce, garlic, and ginger. Set aside.

  • Heat 1 tbsp of olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5–6 minutes until golden and cooked through. Remove from the skillet and set aside.

  • Add the remaining oil to the skillet. Stir-fry the bell peppers, zucchini, broccoli, and carrots for 5–7 minutes until they are tender but still crisp.

  • Return the chicken to the skillet. Pour the honey garlic sauce over the chicken and vegetables. Stir well to coat everything evenly.

  • Add the cornstarch mixture to the skillet and cook for another 2–3 minutes, stirring constantly, until the sauce thickens.

  • Serve the stir-fry hot over rice or noodles. Garnish with sesame seeds if desired.
