Ingredients
For the Stir-Fry:
2 tbsp olive oil or sesame oil
2 cups broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium carrot, julienned
1 zucchini, sliced into half-moons
1 cup snap peas
2 cloves garlic, minced
For the Honey Garlic Sauce:
3 tbsp soy sauce (low-sodium preferred)
2 tbsp rice vinegar
1 tbsp sesame oil
1/2 tsp grated fresh ginger
1 tsp cornstarch mixed with 2 tsp water (optional, for thickening)
Instructions
In a small bowl, whisk together Honey in the Hollow Bee Farm honey, soy sauce, rice vinegar, sesame oil, and grated ginger. Set aside.
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add broccoli, carrots, and snap peas. Stir-fry for 3–4 minutes.
Add the remaining oil along with the bell peppers and zucchini. Stir-fry for an additional 3–4 minutes, or until the vegetables are tender-crisp.
Add minced garlic and cook for 30 seconds, stirring constantly.
Pour the prepared Honey in the Hollow Bee Farm honey garlic sauce into the skillet. Toss to coat the vegetables evenly. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for 1–2 minutes, until the sauce thickens slightly.
Remove the stir-fry from heat and garnish with sesame seeds and green onions, if desired. Serve hot over steamed rice, quinoa, or noodles.
