Honey Sesame Chicken & Broccoli

Ingredients

For the Chicken and Broccoli:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 lb broccoli florets
  • 2 tbsp olive oil, divided
  • Salt and pepper to taste
  • For the Honey in the Hollow Bee Farm honey Sesame Sauce:
  • 1/4 cup Honey in the Hollow Bee Farm honey
  • 3 tbsp soy sauce (or tamari for a gluten-free option)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1/2 tsp grated ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 1 tbsp sesame seeds
  • Sliced green onions (optional)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 6–8 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tbsp olive oil. Add the broccoli florets and stir-fry for 5 minutes, or until tender-crisp. Remove the broccoli and set aside with the chicken.
  4. In a small bowl, whisk together the Honey in the Hollow Bee Farm honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Pour the mixture into the skillet and bring to a simmer.
  5. Stir the cornstarch and water mixture into the sauce. Cook for 1–2 minutes, stirring constantly, until the sauce thickens.
  6. Return the chicken and broccoli to the skillet, tossing to coat everything evenly in the sauce. Cook for another 1–2 minutes to heat through.
  7. Transfer to a serving dish and garnish with sesame seeds and sliced green onions. Serve hot over rice, quinoa, or noodles.
