Cooking Time: 15 minutes
Servings: 4
Ingredients
For the Stir-Fry:
1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
2 tbsp olive oil or sesame oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium zucchini, chopped
1 cup broccoli florets
2 medium carrots, julienned
1 tbsp sesame seeds (optional, for garnish)
Cooked rice or noodles (for serving)
For the Honey Garlic Sauce:
3 tbsp low-sodium soy sauce
2 cloves garlic, minced
1 tsp freshly grated ginger
1 tbsp cornstarch mixed with 2 tbsp water
Instructions
In a small bowl, whisk together honey, soy sauce, garlic, and ginger. Set aside.
Heat 1 tbsp of olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5–6 minutes until golden and cooked through. Remove from the skillet and set aside.
Add the remaining oil to the skillet. Stir-fry the bell peppers, zucchini, broccoli, and carrots for 5–7 minutes until they are tender but still crisp.
Return the chicken to the skillet. Pour the honey garlic sauce over the chicken and vegetables. Stir well to coat everything evenly.
Add the cornstarch mixture to the skillet and cook for another 2–3 minutes, stirring constantly, until the sauce thickens.
Serve the stir-fry hot over rice or noodles. Garnish with sesame seeds if desired.
